Ayam bakar sambal cabe ijo: Roasted chicken with sambal cabe ijo
This is the definitive dish that we tried in Lombok that started Sambal Ding Ding. Sambal Cabe Ijo is a mildly spicy relish, as it is made with unripe green chilies that have not yet reached their peak spiciness. This versatile condiment pairs perfectly with fried dishes, such as deep-fried fish or chicken. Although it's a simple relish, its delicious taste is sure to please your palate.
If you find regular spicy sambal too intimidating, give Sambal Cabe Ijo, or green chili sambal sauce, a try! This condiment has a milder spice level than regular sambal, but still delivers a unique level of heat. Its flavour can be described as a fresh, zesty kick rather than an overpowering burn.

INGREDIENTS
400g Skin-on chicken thighs or drumsticks
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp onion powder
1/2 tsp garlic powder
Grapeseed oil or sunflower oil (or any oil that you normally use)

DIRECTIONS
Part 1: Roasted chicken
Put chicken in a mixing bowl. Add the ingredients for the marinade and give it a good mix. Marinate for 30 minutes, overnight is best.
Preheat your oven to 210°C. If chicken has been in the fridge, take it out and allow to warm to room temperature.
Place chicken skin side up in a roasting pan.
Place the roasting pan in the oven. Cook for about 25 to 30 minutes or until skin is golden.
Once the chickens are cooked, allow to rest for 10 minutes before serving.
Part 2: Assembly
Plate hot steamed rice and the roasted chicken
Coat the chicken generously with the Sambal Ding Ding Sambal Cabe Ijo.
Fried tempe and tofu goes really well with this dish. Or you can add some cabbage, cherry tomatoes or a fried egg.
Tip
To achieve a crispy skin on the chicken, gently pat it dry with a kitchen towel before adding in the seasonings.
